Sue loaf was made using my master recipe with the following tweaks:
250g Spelt, Emmer and Einkorn flour (Heritage flours)
250g Strong White flour
350g water
50g starter
Salt to taste
PLUS:
A good tsp of ras el hanout spice mix
A pinch of saffron
75g diced dried apricots
All added right from the start then made and baked as usual.
